Along those lines I have a question about the PCBs as well. So will all of the components that each of the boards need already be soldered onto the boards when we get them? We don't have to purchase any of the components ourselves or solder any of them?

Unless you have unusual needs for your project (which might be the case for some analog projects), the Caravel development board should have everything you need. It comes fully assembled.
