2. I understood that the ESD protection is not included for analog I/O pins from the documentation. To what extend it can affect the circuit during manufacturing if we don't add an ESD protection from our side. Please let me know if there is any particular documentation you can suggest for adding ESD protection.

If you dont add ESD protection, its very likely that by the time you get the IC the input buffer will simply be broken.
