Where can we get the memory map and datasheet for the actual caravel that was taped out ?

If you go back far enough in the (old) caravel repository (which is now caravel_mpw-one in github/efabless), you can find the original PDF document I made before other people messed with it to its detriment:

in that commit, you will find subdirectory doc/ containing the document

which has what you're looking for.
